Dried vegetable soup mix
A ready base for soups and stews made from four vegetables dried separately.
Prepare every vegetable with its separate WetAir recipe. Mix only fully dried components that have cooled completely, then once water is added cook the mixture as you would fresh vegetables.
This mixture combines finished dried vegetables; it does not replace their drying processes. Mixing cannot correct a damp or under-dried component.
Ingredients
- dried carrot 120 g
- dried onion 100 g
- dried celery 90 g
- dried sweet pepper 90 g
Preparation
- Prepare the dried carrot with its separate recipe and check its dry condition after cooling.
- Prepare the dried onion and dried celery separately with their recipes, without shortening preparation or drying.
- Add only finished dried sweet pepper; every component must be fully dried and cooled completely.
Drying steps
- Do not dry the mixture as one batch: each vegetable must complete its own accepted process and physical endpoint.
- Inspect the cooled vegetables again before mixing and remove any soft, damp or sticky piece.
- Combine only dry, cold components and transfer them immediately to a clean, dry airtight container.

How to check doneness
The mixture is ready to pack only when each component meets the endpoint in its own recipe, has cooled completely and shows no visible moisture.

Mixing cannot correct an under-dried food. If any component is doubtful, do not add it to the shared batch.
Cooling and storage
Cooling
Keep the mixture airtight in a cool, dry and dark place and check the container for condensation. Once water is added, treat it as fresh food and refrigerate leftovers.
Serving ideas
Add the mixture directly to soup or stew and cook it in the liquid until the vegetables reach the texture you want.

No. Complete the separate process for every component first, then let each one cool completely.
