Mushroom powder
A concentrated seasoning for cooked dishes made from fully dry mushrooms.
Make the powder only from fully dry, brittle, cooled mushrooms.
Powder should be made only from mushrooms that have completed the full drying process with no moist or pliable sections.

Ingredients
- cultivated edible mushrooms 760 g
Method

Prepare
Choose positively identified cultivated edible mushrooms with no slime, darkening or spoilage.

Brush soil from the mushrooms, rinse quickly if needed and dry the surface at once.

Cut the mushrooms evenly; never use unknown wild mushrooms because drying does not neutralise natural toxins.

Arrange and dry
Arrange the mushrooms in one layer with gaps for moving air.
Leave space between pieces so air can move freely around them. -
Use the setting shown in the table above and test a cooled piece rather than relying on time alone.

Check and cool
When every piece is dry and brittle, cool them completely, grind them and seal the powder immediately.
Check the texture on a separate piece after it cools briefly.
After cooling
Keep the powder in a dry airtight container, away from heat, light and moisture.
How to enjoy it
Add small amounts to soups, sauces and stews that will be cooked further.

Frequently asked questions
Why must the mushrooms cool before grinding?
Warm food can create condensation in the container. Cool the dry pieces completely first.
Does drying make wild mushrooms safe?
No. Drying does not neutralise every natural toxin or correct a mistaken identification.
