Salmon jerky with lemon and dill
Rich salmon with fresh lemon, dill and a restrained amount of salt.
Keep salmon cold, marinate it under refrigeration, heat the strips to the internal target shown below and hold it for ninety seconds, then begin drying immediately for at least four hours and until properly dry.
Safety first
Marinade flavour, colour and four hours on a timer do not prove safety. Verify the internal heat and hold with a thermometer, then assess dryness separately after cooling.

Lemon juice, dill and salt provide the flavour. The marinade does not make raw fish safe and cannot replace the thermometer-controlled heat step.
Ingredients
- salmon fillet 800 g
- lemon juice 25 ml
- dill 5 g
- salt 4 g
Preparation
- If frozen, thaw the salmon only in the refrigerator and keep it cold throughout preparation.
- Remove skin and bones, then cut the fillet into even strips without inventing an unsupported slice thickness.
- Combine lemon juice, dill and salt, coat the salmon evenly and marinate it in a covered container in the refrigerator.
- Drain excess marinade, blot the surface and arrange the strips on a clean baking sheet without touching.
Drying steps
- Preheat the dehydrator for fifteen to thirty minutes and use a separate thermometer to check the circulating air.
- Bake the salmon to the internal target shown below, measure with a thin-tipped thermometer and hold for ninety seconds.
- With clean tongs, move the hot strips immediately to the preheated dehydrator and arrange them without touching or overlapping.
- Dry for at least four hours, but finish only when a slightly cooled test strip meets the physical dryness endpoint.
- Cool completely, loosely condition in a closed container for two to four days and shake daily; if moisture appears, re-dry the entire batch and check again.

How to check doneness
A slightly cooled strip is chewy and leathery, bends and cracks without breaking, and has no damp spots.

Cooling
After conditioning, pack the jerky airtight with as little trapped air as practical and keep it in the refrigerator or freezer. Do not make an unsupported room-temperature claim for fish jerky.
