Dried fruit compote mix
Four separately dried fruits for compote, uzvar and other rehydrated fruit dishes.
Prepare every fruit with its separate WetAir recipe. Mix only fully dried fruit that has cooled completely, then once water is added prepare it as ordinary rehydrated fruit.
The mixture can be assembled in advance from finished dried fruit. Mixing cannot correct a damp, sticky or under-dried piece.
Ingredients
- dried apples 120 g
- dried pears 100 g
- dried plums 90 g
- dried apricots 90 g
Preparation
- Prepare the dried apples and dried pears with their separate recipes and check them after cooling.
- Prepare the dried plums and dried apricots separately, following the appropriate process for each fruit.
- Keep only fully dried pieces that have cooled completely and show no visible moisture.
Drying steps
- Do not apply one shared setting to different fruits: complete each separate recipe to its physical endpoint.
- Inspect every cooled fruit and remove pieces that are damp, sticky or doubtful.
- Combine the dry, cold components with clean dry utensils and seal them immediately.

How to check doneness
Before mixing, each fruit must meet the endpoint in its separate recipe, have cooled completely and show no visible moisture.

Do not try to correct an under-dried component by mixing it with dry fruit. Keep any doubtful piece out of the shared container.

Cooling
Keep the dry mixture in an airtight container in a cool, dry and dark place. Once water is added, treat the fruit as fresh and refrigerate leftovers.

Rehydrate the mixture and prepare compote, uzvar or another fruit dish; choose the water quantity and final softness for the particular dish.
