Dried blueberries
Small berries with a chewy centre and deep flavour.
Blueberry skins slow moisture loss, making the approved skin-opening pretreatment and a cooled doneness check important for an even batch. Check one cooled piece for doneness.
Check several large blueberries; the smallest berries may dry before the rest of the batch.

Prepare
Wash sound fruit under clean running water and discard mouldy, leaking or badly bruised pieces.

Use firm cultivated blueberries, not bilberries. Dip the washed berries in boiling water for thirty seconds to check the skins, then drain.

Drain the prepared fruit and arrange it on the trays promptly.

Arrange and dry
Arrange the prepared fruit in one layer with clear gaps and no overlap.
Leave space between pieces so air can move freely around them. -
Select the temperature shown in the table above and check that air can move freely around every loaded tray.

Near completion, cool a sample before judging it and remove pieces separately as they reach the physical endpoint.

Check and cool
Move the finished pieces to a clean rack and let them cool completely before packing.
Check the texture on a separate piece after it cools briefly.
After cooling
Loosely fill clean jars with completely cooled dried fruit, seal and condition for seven to ten days, shaking and checking for moisture daily. If condensation appears, re-dry only unspoiled fruit; discard the contents if mould appears. Then store airtight in a cool, dry, dark place.
How to enjoy it
Mix into granola or add to baked oat dishes.

Frequently asked questions
Can I pack the whole batch after checking one piece?
No. Check several thicker pieces from different trays. Keep drying any that remain damp; remove and cool the finished pieces separately.
