Soy and ginger salmon jerky
Savoury soy sauce, fresh ginger and a light honey note.
Prepare salmon while cold, coat it with soy sauce, ginger and honey, marinate under refrigeration, then apply the thermometer-controlled heat step and dry for at least four hours.

Honey rounds the saltiness and ginger brings aroma. None of the marinade ingredients is a pathogen-control treatment for raw fish.
Ingredients
- salmon fillet 800 g
- soy sauce 42 ml
- fresh ginger 12 g
- honey 14 g
Preparation
- Thaw salmon in the refrigerator when needed and do not leave raw fish warming on the counter.
- Remove the skin and bones, then cut the fillet into even strips without stating an unsupported thickness.
- Grate the ginger, combine it with soy sauce and honey, coat the salmon and marinate in a covered container in the refrigerator.
- Drain the marinade, blot the strips and place them on a clean baking sheet in one non-touching layer.
Drying steps
- Preheat the dehydrator for fifteen to thirty minutes and verify the air near the trays with a thermometer.
- Bake the strips to the internal target below, check with a thin-tipped probe and hold for ninety seconds.
- Transfer the salmon immediately with clean tongs and leave free space for air around every strip.
- Dry for at least four hours and continue to a chewy, leathery structure with no damp areas.
- Cool and condition in a closed container for two to four days, shaking daily; if moisture appears, re-dry the batch and repeat the check.

How to check doneness
A cooled edge bends and cracks but does not snap like a dry twig, and the centre has no damp areas.

Pack conditioned jerky airtight and keep it in the refrigerator or freezer because rancid fish oil can shorten its useful life.

Does soy sauce preserve the fish safely?
No. The marinade cannot replace verified heating, drying to the physical endpoint and cold storage.
Why is there no maximum drying time?
The source gives a minimum; actual completion depends on the dryness of each cooled strip.
What if moisture appears during conditioning?
Return the whole batch to the dehydrator, dry it further, cool it and repeat conditioning.
