Dried pumpkin
Dry pumpkin pieces for soups, grains and purées.
Firm pumpkin is suitable for drying after safe peeling, consistent cutting and blanching. Check one cooled piece for doneness.
For a first try, prepare a small batch: even pieces are easier to space well and check without rushing.

Prepare
Wash the pumpkin, peel it and remove the seeds and fibers.

Cut strips about two and a half cm wide and three point two mm (one eighth inch) thick.

Steam above boiling water for three minutes. Briefly dip in cold water to stop cooking, then drain well.

Arrange and dry
Preheat the dehydrator to sixty degrees Celsius (one hundred and forty degrees Fahrenheit). Arrange the prepared pieces in a single layer with space for air to circulate.
Leave space between pieces so air can move freely around them. -
Dry until the cooled pieces are brittle, with no visible moisture. Check several pieces from different trays; elapsed time alone does not establish doneness.

Check and cool
Cool the dried pieces for thirty to sixty minutes before packing; they must be completely cool.
Check the texture on a separate piece after it cools briefly.
After cooling
Pack completely cooled pieces in airtight containers. Store in a cool, dry, dark place and check for moisture or mould; discard mouldy food.
How to enjoy it
For cooking, rehydrate with two cups of boiling water per cup of dried vegetables. If soaking takes longer than two hours, keep the food refrigerated.

Can I pack the whole batch after checking one piece?
No. Check several thicker pieces from different trays. Keep drying any that remain damp; remove and cool the finished pieces separately.
