Strawberry and apple fruit leather
A thin fruit sheet with an even texture and gentle fruit flavour.
Strawberry brings aroma and colour while apple gives the berry purée more body and helps form an even sheet. Check the centre of the sheet, not just the edges.
Make the first sheet a modest one: it is easier to level the purée and check the centre without rushing.
| Temperature | Dehydrator stage: 60 °C / 140 °F |
|---|---|
| Ready when | Judge the centre rather than the dry edges alone: pressure leaves no indentation, the surface is not tacky with wet purée, and the warm sheet lifts from the liner in one piece. |

Ingredients
- strawberries 760 g
- apples 240 g
- lemon juice 15 ml
Method
-
Prepare
Sort the sound fruit and wash it under clean running water.
-
Hull the strawberries and core the apples, add the lemon juice, then blend the fruit together.
-
Check that no large pieces, stones or hard fragments remain to disrupt the even layer.
-
Arrange and dry
Spread the purée as one continuous, even layer on a suitable liner. Avoid deep pools at the edges and keep airflow paths between trays open.
One continuous, level sheet of purée on a liner; no gaps within the sheet. -
Use the setting shown in the table above. Check several parts of the sheet because the edges and centre can dry at different rates.
-
Press the centre before lifting the sheet: it must not retain an indentation. A finished sheet releases warm without wet purée clinging to the liner.
-
Check and cool
Peel the finished leather from the tray while it is still warm, then roll or cut it. Let it cool completely before wrapping it airtight.
Check the texture on a separate piece after it cools briefly.
After cooling
Wrap the fully cooled leather tightly and place it in an airtight container in a cool, dry, dark place. Discard it if mould appears.
How to enjoy it
Roll into small portions for a fragrant berry snack.

Frequently asked questions
How can I dry the leather evenly?
Spread the purée in an even layer and check the centre separately from the edges, because moisture lingers there longest.
