Spiced pumpkin leather
Tender pumpkin leather with honey, cinnamon, nutmeg and cloves.
Pumpkin purée with honey and warm spices makes a tender, aromatic fruit leather. Check the centre after it has cooled.

Ingredients
- cooked pumpkin purée 2 cup
- honey 0.5 cup
- cinnamon 0.25 tsp
- nutmeg 0.125 tsp
- ground cloves 0.125 tsp
Method

Prepare
Use canned pumpkin purée or cook fresh pumpkin until tender and blend it free of lumps.

Add the honey, cinnamon, nutmeg and ground cloves.

Mix to a completely smooth consistency and check that no hard particles remain.

Arrange and dry
Spread the purée as an even continuous layer on a suitable fruit-leather tray.
Leave space between pieces so air can move freely around them. -
Select the temperature shown in the table above and check the edges and centre separately.

Lift the leather when the warm sheet releases cleanly and remains flexible.

Check and cool
The warm sheet releases cleanly, has no wet areas and remains flexible and chewy after cooling.
Check the texture on a separate piece after it cools briefly. -
Let the sheet cool completely on the tray before lifting it and dividing it into portions.
After cooling
Roll the sheet or cut it into portions and wrap it closely. Keep in an airtight container in a cool, dry and dark place; this recipe makes no fixed shelf-life promise.
How to enjoy it
Cut the leather into strips and serve as a pumpkin snack.
