Apple fruit leather
A thin fruit sheet with an even texture and gentle fruit flavour.
Ripe apple gives a clean fruit flavour while lemon juice balances the sweetness without extra sweetener. Check the centre of the sheet, not just the edges.
Make the first sheet a modest one: it is easier to level the purée and check the centre without rushing.

- lemon juice 18 ml
Method

Prepare
Sort the sound fruit and wash it under clean running water.

Core the apples, add the lemon juice and blend the flesh to a smooth purée with no large pieces.

Check that no large pieces, stones or hard fragments remain to disrupt the even layer.

Arrange and dry
Spread the purée as one continuous, even layer on a suitable liner. Avoid deep pools at the edges and keep airflow paths between trays open.

Use the setting shown in the table above. Check several parts of the sheet because the edges and centre can dry at different rates.

Press the centre before lifting the sheet: it must not retain an indentation. A finished sheet releases warm without wet purée clinging to the liner.

Check and cool
Peel the finished leather from the tray while it is still warm, then roll or cut it. Let it cool completely before wrapping it airtight.
Check the texture on a separate piece after it cools briefly.
After cooling
Wrap the fully cooled leather tightly and place it in an airtight container in a cool, dry, dark place. Discard it if mould appears.

Cut into strips and serve as a simple apple snack.
