Apple and cinnamon fruit leather
A thin fruit sheet with an even texture, dried without an invented time or finished yield.
Sort and prepare the fruit, blend every ingredient to a uniform purée, then spread it evenly on a suitable solid liner. Dry at the setting shown in the process card; finish only when the centre no longer dents and the warm sheet lifts cleanly from the liner.
Cinnamon gives the apple purée a warm aroma, but it never replaces the physical check for a finished sheet.
Ingredients
- apples 900 g
- cinnamon 5 g
- lemon juice 18 ml
Preparation
- Sort the sound fruit and wash it under clean running water.
- Core the apples, add the cinnamon and lemon juice, then blend everything to a uniform purée.
- Check that no large pieces, stones or hard fragments remain to disrupt the even layer.
Drying steps
- Spread the purée as one continuous, even layer on a suitable liner. Avoid deep pools at the edges and keep airflow paths between trays open.
- Use the setting in the process card. Check several parts of the sheet because the edges and centre can dry at different rates.
- Press the centre before lifting the sheet: it must not retain an indentation. A finished sheet releases warm without wet purée clinging to the liner.

How to check doneness
Judge the centre rather than the dry edges alone: pressure leaves no indentation, the surface is not tacky with wet purée, and the warm sheet lifts from the liner in one piece.
Safety first
Use clean hands and utensils and start only with sound fruit. Dehydration cannot repair mould, decay or contamination; discard any product that develops mould.
Cooling and storage

Cool the sheet completely, then roll it or cut it into portions and wrap it closely. Store it in a cool, dry and dark place in line with the cited guidance; this recipe makes no fixed shelf-life promise.

Why do the edges finish before the centre?
The layer may be uneven or airflow may differ across the tray. Test the centre separately and continue drying until it passes the indentation check.
What if the sheet is tacky after cooling?
If it shows no sign of spoilage, return it to the dehydrator and test the centre again. Discard a sheet with mould or a suspicious smell.
