Classic pork jerky
Lean strips are marinated under refrigeration, heated separately to a safe internal temperature, then dehydrated to a dry, resilient texture.
Trim visible fat, cut the meat no thicker than the limit in the process card and marinate under refrigeration. Before dehydration, roast or steam it to the internal temperature shown below and confirm that temperature with a food thermometer. Dehydrate in one layer; time is only a guide, and completion is decided after a sample has cooled briefly.
Safety first
Marinade, acid, salt, sweet ingredients and smoke flavour affect taste but do not make raw meat safe. Do not skip the separate heat step to the required internal temperature or its thermometer check.

Lean pork takes a vinegar and sugar base, and a cross-grain cut shortens the bite with a distinct tang.
Ingredients
- lean pork 850 g
- cider vinegar 30 ml
- brown sugar 15 g
- black pepper 3 g
Preparation
- Trim visible fat and cut the meat into even strips no thicker than the maximum shown in the process card.
- Thaw meat only under refrigeration and keep it refrigerated throughout marination.
- Keep raw meat, utensils and juices separate from ready-to-eat food; clean the work area thoroughly before reusing it.
- Once that method has been selected, remove visible fat from lean pork, cut it across the grain, and coat it with cider vinegar, brown sugar and black pepper.
- Before dehydration, roast the meat in an oven or steam it to the internal temperature shown in the process card and confirm it with a calibrated food thermometer.
Drying steps
- Following the selected method, lay the trimmed pork strips flat without overlap and leave clear gaps around their edges.
- Arrange the strips in one layer without touching or overlap so air can circulate around every surface.
- Select the temperature in the process card and check actual air beside loaded trays with a separate thermometer. Use time only for planning.

How to check doneness
A briefly cooled sample should bend and crack without breaking, with no damp or under-dried spots inside. Colour and elapsed drying time do not prove completion.

Cool jerky completely before airtight packaging. Keep the finished food refrigerated or frozen; any other storage plan requires separate water-activity verification.
