Orange and lemon peel powder
Bright citrus flavour without the bitter white pith.
Grind “Orange and lemon peel powder” only from brittle cooled pieces.
Use sound, thoroughly washed orange and lemon peel. The bitter white pith is removed before drying.

Ingredients
- orange peel 300 g
- lemon peel 200 g
Method

Prepare
Wash the oranges and lemons thoroughly and dry their surfaces.

Remove the coloured orange peel and lemon peel while leaving the bitter white pith behind.

Spread both peels in a single loose layer without folded or overlapping areas.

Arrange and dry
Use the setting and planning range shown in the table above and keep air paths open.
Leave space between pieces so air can move freely around them. -
Continue until every cooled piece is dry and crisp enough to grind cleanly.

Cool the peel completely, grind it finely and seal the powder immediately in a clean dry container.

The cooled peel is completely dry and crisp, with no flexible damp sections, and grinds to a fine powder.
Check the texture on a separate piece after it cools briefly. -
Cool the dry pieces completely before grinding them.
After cooling
Keep the powder in a dry airtight container, away from heat, light and moisture.
