Ingredients
- cod fillet 800 g
- paprika 7 g
- lemon juice 25 ml
- garlic 6 g
Method

Prepare
Remove the skin and every bone, then cut the cod into even strips.

Combine paprika, lemon juice and finely grated garlic, coat the cod and marinate it in a covered container in the refrigerator.

Drain and blot the strips, then arrange them separately on a clean baking sheet.

Arrange and dry
Dry without overlap for at least four hours and continue until a cooled strip meets the physical endpoint.
Leave space between pieces so air can move freely around them. -
Check and cool
A cooled strip is leathery and chewy, bends and cracks without breaking, and has no damp spots.
Check the texture on a separate piece after it cools briefly. -
Cool the finished fish strips on a clean rack, then condition them as described in the shared guide.

After conditioning, pack airtight and keep refrigerated or frozen; room-temperature storage is not part of this method.
