Milk bread
A tender, gently sweet crumb for breakfasts and homemade sandwiches.
Choose one size, place the milk and egg with the liquid ingredients and start the sweet or manufacturer-recommended programme.
Milk, butter and egg make a soft crumb and colour the crust more quickly. Choose the sweet programme, or the exact enriched-dough equivalent named by your machine's manual.

Load the pan
- Add the milk and egg to the pan.
- Add the butter, sugar, salt and milk powder.
- Cover the liquid with the flour.
- Put the yeast into a dry well on top.
- Start the sweet or specified programme straight away.

Take out the milk and egg only when you are ready to load the pan.

Wet ingredients remain below and yeast stays dry on top.

Start the programme
Choose the crust with the quicker browning in mind, then let the machine complete its cycle.

Cool
When the cycle ends, move the loaf to a rack and let the crumb settle before slicing.
If something looks off
The crust is too dark
Milk ingredients and sugar brown faster; choose a lighter crust next time if your machine allows it.
The loaf feels heavy
Check the flour amount, yeast freshness and that the programme suits enriched dough.
My machine has no sweet programme
Use only the equivalent your model's manufacturer recommends for enriched dough; do not choose one merely because its duration looks similar.
After cooling
Keep it closed once completely cool. In warm weather, do not leave it at room temperature for long; freezing in slices is convenient.
How to enjoy it
Enjoy it with butter, jam or cheese, or turn it into French toast.
