French bread
A lighter crumb and a more pronounced crust without hand shaping.
Measure one size from the table and choose the French bread programme, or its exact equivalent, on your machine.
This loaf uses more water and a restrained ingredient list. It is especially enjoyable on the day it is baked, while the crust still has a clear crunch.

What happens next
- 1
Measure
Take every value from one column.
- 2
Protect the yeast
Flour keeps it away from water and salt before the cycle begins.
- 3
Let the programme work
The machine controls its own rise and baking profile.
- 4
Keep the crust crisp
Remove the loaf at the signal and cool it uncovered on a rack.
If something looks off
The crust softens quickly
Do not leave the loaf in the warm pan for long and do not wrap it before it is fully cool.
The crumb feels sticky
Let the loaf cool before slicing and recheck the water and flour measurements next time.
The loaf barely rose
Check the yeast, the selected programme and its dry separation from liquid before the start.
After cooling
The texture is best on baking day. Close up the cooled remainder, or freeze it in slices for longer storage.
How to enjoy it
Lovely with soup, cheese and butter, or toasted for breakfast.

Frequently asked questions
Does it need sugar?
The official formula used here contains no sugar, so do not add it automatically.
Can I use the basic programme?
Only if your machine manual explicitly treats it as equivalent to the French profile; otherwise use the named programme.
