Basic white bread
A calm first loaf with a soft crumb and an even crust.
Choose one column, load the ingredients from wet to dry, then run your machine's basic bread programme.
This is a good first recipe for getting to know a bread maker. After a loaf or two, you will recognise how your flour takes up water and judge the dough with much more confidence.

Load the pan
- Fit the kneading paddle and pour the water into the pan.
- Add the butter, salt, sugar and milk powder.
- Cover the liquid with an even layer of flour.
- Make a shallow well in the flour and add the yeast without letting it touch salt or water.
- Select the loaf size, crust and basic programme.

If something looks off
The loaf is low and dense
Check the yeast is fresh, measurements are accurate and the yeast did not touch salt or water before starting.
The top collapsed
Next time recheck the selected size and the water and yeast amounts; avoid opening the lid during the rise.
Flour remains in the corners
After the cycle, review the loading order and measurements. On the next bake, adjust the dough only when and as your machine manual permits.
After cooling
Once completely cool, keep the bread in a clean closed bag or bread bin; slice and freeze it for longer storage.
